From the Kitchen : Miso Pork and Tofu One Pot
As the weather starts to play games with us again, its probably time to have something warming and comforting. If the weather is to sadistic in letting you go out, why not make this simple Japanese soul food? Other than miso, the ingredients are easy to obtain and probably be lying around in your pantry.
As this is supposed to be a simple dish with little frills and tricks, measurements to this and it will be all up to taste. So references to metrics here will be based on what I have done. And for this attempt, it can feed 3 people.
Miso Pork and Tofu One Pot
1 carrot, chooped
1 rib of celery, chopped
2 onions, chopped
4 cloves of garlic, chopped
400 gm chicken bones
300 gm pork ribs
300 gm belly of pork slices
1 block of tofu
4 tablespoons, sweet miso
2 teaspoons, crushed pepper corns
Steps.
1. Start by making the stock by boiling a pot of water with the meats and all the veggies once they are chopped. Add in the pepper corns.

2. Leave it on a low simmer for approx. 2 hours. After the 2 hours, remove the chicken bones as they have done their job.
3. Once the flavours of all the ingredients are permeated into the water, dilute the miso with some of the hot stock and mix it into the pot. Stir continuously until it has diluted.

4. When the miso has properly amalgamated into the stock, add a block of diced tofu and cook it for a minute or 2 and you are done! Serve it with some warm rice

A very simple dish that does most of the prep by itself. This is a go to weapon whenever I am under a weather, and I swear this is a reliable cold killer. Do give this home-style Japanese recipe a go which needs little prep but yields maximum flavour.
