From the Kitchen : Shakshuka (African Tomato and Eggs)
In need for something a bit out of the ordinary for your breakfast? This will probably will sort you out very easily. With easy to find ingredients and a great colour, this recipe should be under anyone's arsenal. And after trying out several recipes, I have come up with my own improvised (and probably improved) one.
So here it goes, here is my rendition of the Shakshuka
Shakshuka:
1 floury potato
1 red pepper, chopped
120 gm cherry tomatoes
1 onion, chopped
2 eggs
3 tsp cumin
4 tsp paprika (if you cannot find this, then chilli powder is fine)
1/2 cup of white wine vinegar or apple vinegar
1 tsp sugar

1. Chop your potatoes into cubes and fry them under a medium heat for a couple of minutes until about 2/3 the way cooked. While cooking, season with the paprika and some salt.
Pro tip: You can cook all the way through if you would like but we will cook for a second time. So, this will be more practical. Also, cutting them into smaller sizes will quicken the cooking process.
Just keep an eye if it becomes dry. Add a bit more vinegar if needed. |
2. Remove the potatoes and fry your onions . Once they are fragrant and caramelised, add the tomatoes and peppers. Add your vinegar soon after to make a tomato sauce. Add the sugar soon afterwards to cut the acidity. Leave it to simmer, but do stir occasionally. The sauce is done once the tomatoes have broken down so something similar to a pasta sauce.

3. Combine all your cooked items into a oven proof container, like a baking tray or a ceramic bowl. Create a well for each egg you have and crack them into the said well. Season the top of each egg with some salt and pepper.
Pro tip: You can crack one egg into a cup then pour into the bowl. This way, you will be more accurate and prevent unnecessary messiness.
4. Bake in a preheated oven (160C) for about 12 minutes or until the eggs are done.

Note: this is a very healthy and vibrant way to start off your day. I can enjoy this on its own but i personally recommend having this with some garlic toast. Just get some plain white bread and spread over some garlic butter after toasting. That to me, is a breakfast fit for a king.
