From the Kitchen : Spicy Pasta with Tuna and Sardines



This dish has no business to taste this good. But it was a real knockout. So if you are already tired with eating tinned fish for the longest time but you still have a lot more cans to go, this recipe will sort you out easily.

Without further ado, here is the next installment of the "home-containment" series!


Spicy Pasta with Tuna and Sardines


canned tuna (used as much as you have, I used 80 gm)
canned sardines (same as above, I used a 100 gm can)
5 cloves of garlic, crushed
4 dried chillies
juice of 1 lime.
chopped coriander
dried mixed herbs

1/2 a pack of spaghetti (this serves 3 adults)

Steps:


Trying out the new pan!


1. Fry your garlic until fragrant. Before it becomes golden, add in your canned fishes and dried herbs. If you have chilli flavoured ones, by all means use them. Mix them well until the fish becomes flaky and golden, but not too burnt.


To save time, cook the pasta the same time you cook the fish. 


2. Add in some lime juice soon after. Boil your pasta in some salted water at the same time.


Really putting this pan into good use!


3. Once your pasta is cooked, add into the pan and stir fry until well mixed. Add more lime juice if you like. Season with salt and pepper.

Ready to be served.


4. Just before serving, add in your chopped coriander.




Pro tips:


  • Since this is a "survival" meal in any event, you can replace the lime juice with any vinegar that you have, well save for red wine or balsamic vinegar. White vinegar or apple cider vinegar will work nicely.
  • If you do not have lime or vinegar, lemon juice is a good alternative.
  • If you do not have dried chillies, you can use chilli flakes. But if you are one of the lucky ones, fresh chillies will push the flavour factor even further. 
  • Any form of pasta will do. 
  • When cooking pasta in the pan, try not to crowd it too much. This will affect the melding of the flavours. Well gastronauts will call this the Mailliard reaction, the Cantonese simply call it "wok hei". 

That is all! It is that simple! Again, this dish has really no business to taste this good but if you are really in a pinch, this is a fine meal to feed the family. Also, I was fortunate enough to have sardines in chilli oil, which added alot of flavour. But if you do not have that, using just tuna alone will suffice.


This was a real game changer!
