Noodles @ Lian Shin Coffee Shop, Jalan Tun Perak, Malacca
Noodles are a seriously underrated meal in the Malaccan gastro-scape. There are some famous noodle dishes like laksa and mee goreng ala "mee bodoh". But noodles in general are not really what most people would think of in terms of local favourites.

Despite that, it is a deeply loved favourite of locals. The way that noodles are made here is just different. With a more pure wheat flavour and a more chewy texture, akin to fresh pasta, noodles in general here are just way more enjoyable. And one of the places I visit for my noodle fix is Lian Shin Coffee Shop. Just slightly outside of Malacca town, lies this local gem that I used to frequent. That was because this humble noodle spot is just a few minutes walk from my parents' apartment. Now, it is time to reintroduce myself to an old companion.

Without a doubt, the order for today is the "hi kiao mee", translated as fish cake noodles in local Hokkien speak. It stood for a modest RM6. Slightly more expensive than how I used to remember it, but still a fairly reasonable price. A cup of coffee accompanied it, and that stood for RM 1.30.It may look simple, but it had the same inviting look I remembered it to have.

Generously loaded with fish cake, char siew pork, and a bowl of dish ball soup, its simplicity is actually its plus point. But that is not all, as this bowl of noodles is actually spiked with a meat sauce made with pork lard, soy sauce, scallion oil, and a few other spices only the chef would know.

Despite being years, the flavour was still great and satisfying. The toppings added an extra element in terms of flavour and texture to it. And of course, the noodles were really on point. Supple, chewy and just easy to get my slurping game down, it got cleared in a matter of moments. The fish balls were pretty good too, although, like the fish cake, I would suspect it to be store-bought. Then again, at this budget price, I cannot really complain.

The coffee that came along also help round out the meal. Malaccan coffee shops are also another hidden gem not many people are aware of. They are just on another level. And the kopi O here just hits all the right notes. What a great start to the day.

Do note that this establishment usually operates for breakfasts although they do sometimes close shop at about 1pm, depending on if they still have anything left.
